10-Minute Vegan Coronation Chicken / Chickpeas

No-cook vegan coronation chicken that's done in 10 minutes! Made with chickpeas (or vegan chicken, tofu, or tempeh), it's a versatile and delicious recipe!

Ingredients

For the Vegan Coronation Sauce + Chicken

  • 1 can chickpeas (400 grams before draining, 240 grams after draining) or sub with cooked vegan chicken, tofu, or tempeh
  • 4 Tablespoons mayo store-bought or make my 3-minute oil-free mayo
  • 2 Tablespoons mango chutney
  • 2 teaspoons curry powder
  • 3 Tablespoons raisins
  • ½ lemon juiced

For Garnish

  • 1 Tablespoon almond flakes (optional)
  • coriander (optional but recommended) to taste
  • freshly cracked black pepper (optional but recommended) to taste

For Serving

  • 1 bunch little gem lettuce sub with any other lettuce
  • 8 slices whole wheat bread (optional, only if you want to make a sandwich)

Instructions

  • Use the back of a fork to mash your chickpeas to your desired consistency. If you're using vegan chicken, tofu, or tempeh, cook them by air frying, pan frying, or baking.
  • In a large bowl, mix all the ingredients for the coronation chicken sauce (the mayo, mango chutney, curry powder, raisins, and lemon juice).

Now, 3 ways to serve your coronation chickpeas.

  • If you want coronation lettuce wraps, spoon in the coronation chicken onto your gem lettuce. Add the garnish on top and enjoy!
  • If you want a coronation salad platter, then spread out your gem lettuce over a large plate. Then top with the coronation chickpeas, followed by the garnish.
  • If you want a coronation chickpea sandwich, put 2 gem lettuces on two bread slices, then spoon the coronation chickpeas onto one of them. Add the garnish and then top with the other bread. Or feel free to serve this as an open-faced sandwich!
