Cook Time 5 minutes
Chill Time 45 minutes
Total Time 50 minutes
Serving Size 2 servings

Ingredients

  • 2 medium ripe bananas more for optional toppings; please see notes below
  • ¼ cup dark chocolate chips
  • 1 teaspoon vanilla extract

For Garnish (optional)

  • 1 Tablespoon (vegan) yogurt Greek yogurt variation works best, but any yogurt works
  • shaved chocolate

Instructions

  • Melt your dark chocolate chips in a small bowl in the microwave. Use a low power and start by microwaving for 30 seconds. Stir, then microwave in 15-second increments, stirring in between.
Be sure to use a low power so that you don't burn your chocolate.
    1/4 cup dark chocolate chips
  • Blend all the ingredients in a small high-powered blender until very smooth, for about 30 to 90 seconds. If you only have a bigger blender, simply double or triple the recipe.
2 medium ripe bananas, 1 teaspoon vanilla extract, 1/4 cup dark chocolate chips
  • Transfer into 2 (or more) serving glasses. Set in the fridge for at least 45 minutes until the mixture sets. The texture should then be more firm and become more mousse-like, instead of being quite runny right out of the blender.
  • (Optional) Scoop a heaping Tablespoon of your yogurt, then place on top of the mousse. Add a few banana slices if you would like, then sprinkle some shaved chocolate on top. Enjoy!
1 Tablespoon (vegan) yogurt, shaved chocolate, 2 medium ripe bananas

Notes

  • You want ripe bananas that are just starting to get spotty. So refrain from using bananas that are very spotty (like the ones you would use in banana bread) since the banana taste can be overpowering.
    • However, if you don't mind the banana taste, then feel free to use very ripe bananas!
