Iced mango matcha latte: a refreshing drink combining sweet mangoes with earthy matcha, done in 5 minutes! A unique combo that tastes as good as it looks!
2Tbsphot waterabout 60 to 80°C, so do NOT use boiling water which would have been at 100°C
½cupice cubes
1cupplant-based milk
½ to 1teaspoonof liquid sweeteneroptional; first do a taste test and then add if needed (see notes)
Instructions
Blend the Mango: Blend the cubed mango + water until you get a smooth puree. I recommend using 1 mango and just double the mango puree recipe so there is enough content in the blender.
Make the Matcha: In a small bowl, whisk 1 teaspoon matcha powder with 2 Tablespoons hot water (60-80°C). Use your matcha whisk to whisk in a W or Z shape (instead of the regular circular motion) until smooth for 20-30 seconds. If you don't have a bamboo whisk, a handheld milk frother works too!
Assemble the Latte: Pour in the mango puree. If you're using 1 mango for the puree, just add half and keep the other one for next time.Then add your ice. Slowly pour 1 cup of plant-based milk over the mango puree. Finally, gently pour the matcha on top to create beautiful layers.
Taste and Enjoy: Give it a quick stir before sipping. Taste and see if you'd like to add a bit of liquid sweetener and enjoy!
Notes
Mango Puree: I like to at least double the mango puree recipe (so use 1 mango + 1 Tablespoon water). This ensures that there is enough food in my blender. Store the leftover in the fridge for up to a week to enjoy another mango matcha latte later!
Liquid Sweetener: Most plant-based milk is sweetened and therefore you might not need any additional sweetener. However, if yours comes unsweetened, please add 1/2 to 1 teaspoon of liquid sweetener (like agave syrup or maple syrup).
This of course also depends on preference so that's why I recommend just doing a taste test!
