This 3-ingredient Korean strawberry oat milk is a refreshing dairy-free, vegan, and refined-sugar-free combo of milk & strawberries. Done in 5 minutes!

Ingredients
1cupstrawberries(280g), either frozen or fresh
1mediummedjool date(15g), or sub with 1 Tablespoon of any other sweetener
1cupoat milk(237ml)
Optional:
4mediumstrawberries for toppings (optional)
ΒΌteaspoonvanilla extract(optional)
Instructions
(Optional) Thaw: If using frozen strawberries, thaw by microwaving them for 1-2 minutes.
Simmer: Add the strawberries and dates (or any other sweetener) to a small saucepan. Cook on low heat for 3-4 minutes until the strawberries become soft. Squish them using a stirring spoon to break them into smaller pieces. This will help them cook more evenly and faster.
Puree: Then puree the strawberry mixture using an immersion blender. Let the strawberry puree cool down.If you don't have enough strawberries to puree because you only have a big saucepan, either double the recipe or add 1-2 Tablespoons of oat milk. Just be careful not to add too much liquid so the puree stays thick.
(Optional) Cube: Cube your fresh strawberries into small pieces. See the video for the size.
(Optional) Mix: If using the vanilla extract, mix your oat milk and vanilla extract.
Add: Now add the strawberry puree to the sides of your glass. It should somewhat stick to the sides of the glass so you will get that beautiful pattern.If using the cubed strawberries, add them at this stage.
Pour: Lastly, pour your oat milk (mixture) into the glass and serve immediately. Enjoy!

Ingredients/Equipment Notes:
You can also make your own oat milk at home. To do so, blend rolled oats and water with a 1:5 ratio for 30 seconds. Be sure to not over-blend as it might get slimy otherwise. Strain using a nut milk bag.
Feel free to sub the medjool dates with any other date variety or another sweetener of choice.
If you don't have an immersion blender, you can also use a normal blender or food processor. Be sure to have enough strawberries for the blender/food processor to work properly. You can either double the recipe or add 1-2 Tablespoons of oat milk. Just be careful not to add too much liquid so the puree stays thick.
