5-Minute Weetabix Overnight Cheesecake (Biscoff & Berry)

Ingredients

Base Layer

  • 2 Weetabix crushed, or sub with shredded wheat cereals
  • ½ cup almond milk (114 grams), or sub with any plant-based milk
  • 1 teaspoon maple syrup (5 grams), or sub with agave nectar
  • ½ medium banana

Option 1: Mixed Berries overnight Weetabix

  • ½ cup plant-based yoghurt (114 grams)
  • cup frozen berries (47 grams)
  • Fresh berries for toppings (optional)
  • Almonds for toppings sliced (optional)

Option 2: Biscoff overnight Weetabix

  • ½ cup plant-based yoghurt (114 grams)
  • 1 Tablespoon Biscoff biscuit spread (15 grams)
  • 1 Biscoff cookie (optional) crushed or whole
  • Almonds for toppings sliced (optional)

Instructions

Base Weetabix + banana layer

  • Weetabix layer: Using your hand, crush the Weetabix bars into a big bowl. Then add the almond milk and maple syrup. Mix well and use the back of the spoon to spread the Weetbix layer evenly.
  • Banana layer: Slice the bananas and layer them on top of the Weetabix layer.

Option 1: Mixed Berries overnight Weetabix

  • Berry yoghurt: In a small bowl, melt the frozen berries in a microwave for 30-60 seconds. Then add the yoghurt and stir well to make the berry yoghurt.
  • Add: Pour the berry yoghurt on top of the Weetabix and banana layer.
  • Serve: You can serve this immediately or chill it in the fridge overnight before serving.
    Just before serving, top with fresh berries and sliced almonds if using.

Option 2: Biscoff overnight Weetabix

  • Biscoff yoghurt: In a small bowl, melt the Biscoff cookie spread until it becomes runny by microwaving for 30-60 seconds. Then add the yoghurt and stir to mix.
  • Add: Pour the Biscoff yoghurt on top of the Weetbix and banana layer.
  • Serve: You can serve this immediately or chill it in the fridge overnight before serving.
    Just before serving, top with the Biscoff biscuit and sliced almonds if using. I recommend crushing half of the biscuit into smaller pieces, and sticking the other half on top of the yoghurt layer to make it pretty!

Notes

Ingredients Notes:
  • You can substitute the almond milk with any plant-based milk!
  • If you don't have maple syrup, feel free to sub with agave nectar or any other liquid sweetener.
 
Storage and Meal Prep:
  • Store your flax pudding in the refrigerator for up to 3 days.
  • If you want to meal prep, make it ahead for up to 3 days.
    • For maximum freshness, you can separate the dry ingredient (the Weetbix biscuit) from the wet ingredients (the milk mixture and the yoghurt mixture), and only mix them just before you want to serve them!
