Honey Lavender Simple Syrup (Vegan, 2-Minute Prep)

Ingredients

  • ¼ cup water
  • ¼ cup apple juice or sub with water (see notes below)
  • 2 Tablespoons lavender
  • ½ cup agave syrup (see notes below if you'd like to sub with honey)

Instructions

  • In a small saucepan, bring the water, apple juice, and lavender to a boil. Let it simmer for 30-60 seconds, then turn the heat off.
  • Add your agave syrup, mix well, then let it steep for about 15 minutes.
    Depending on the quality of the lavender, you can let it steep longer for up to 30 minutes. But be sure to check every 5-10 minutes to make sure that the lavender taste won't be too strong (which will make the syrup taste a bit bitter adn soapy).
  • Strain into your storage container, gently pressing down the lavender at the end to squeeze out a bit more lavender flavor. Enjoy with your favorite drink!

Notes

  • I used the apple juice to infuse a little bit of honey-like aroma into the agave syrup. Subbing the apple juice with water would still work and be delicious, but it just lacks a bit of that extra floral aroma that honey has.
  • If you don't mind consuming honey, feel free to just use 1/2 cup water, 2 Tablespoons lavender, and 1/2 cup honey so you don't need to buy apple juice just for this lavender-infused honey!
