The BEST Roasted Red Pepper Aioli (Creamy Mayo Sauce)

Creamy roasted red pepper aioli that is packed with flavor! Using mayo as a base, this simple sauce is guaranteed to jazz up even the simplest dishes!

Ingredients

  • 1 large red bell pepper see notes
  • 1 clove garlic microplaned, grated, or very finely minced
  • ½ cup mayo I used my homemade vegan mayo but feel free to use any other mayo!
  • teaspoon black pepper

Instructions

  • Cut your red bell pepper into 4-6 large strips. Roast in the oven at 430℉ (220℃) for 20 minutes until they are tender and charred in some spots.
    For an easy hack to cut bell peppers, refer to the pictures above.

  • In the meantime, microplane, grate, or finely mince your garlic.
    1 clove garlic
  • Once the red bell peppers have cooled down to the touch and no longer release steam, add all the ingredients to a small blender. Blend for 15-20 seconds until smooth. Enjoy!
