Absolutely! Bagel sandwiches are a delicious and versatile meal. Stack them with your favorite (plant-based) proteins, veggies, and spreads for a hearty on-the-go option. This is the reason why this Creamy Avocado Bagel Sandwich Toast recipe exists, and why my Hummus Bagel Sandwich recipe is a fan-favorite!

  • Whole wheat bagels: The healthy base that adds a wholesome touch to your bagel avocado sandwich.
    • Feel free to use everything bagel, or sub with regular whole wheat bread to make an avocado bagel toast. You can also skip the toasting and make something closer to a vegan finger sandwich instead!
  • Avocado: Creamy goodness that steals the spotlight in every bite.
  • Everything Bagel seasoning mix: In a pinch, salt & freshly ground pepper work but I highly recommend getting this seasoning mix!

How to Make Bagels with Avocado (or Avocado Toast)

Part 1: The Good Old Avocado Bagels

Toast your bagel or bread.

Thinly slice or mash your avocado for creamy goodness.

There are 3 different ways to add your avocado:

  1. Slice: The easy way. Great if you like more of a bite to your toast
  2. Mash: Creamier texture
  3. Mash + slice: The best of both worlds πŸ₯³ You get both that creaminess and the bite to your avocado toast!

If you only want avocado on your bagel without any other veggies, you can then add the Everything Bagel seasoning, or some salt & pepper.

And tadaaaa, you’re done! πŸŽ‰ I would advise to eat this version open-faced, so without the other half of the bagel on top.

Notes: Don’t have bagels at home? You can sub the bagels above with regular whole wheat bread and use the Everything Bagel seasoning to get a tasty bagel avocado toast still!

Part 2 (Optional): Adding more vegetables!

If you want more veggies in your bagel, read on!

To make an avocado bagel sandwich, follow the order: cream cheese, spinach, avocado, tomato, and sprouts. Skip any veggies you’re not using since each avocado & veggie combo is already tasty enough on its own! So for example, just use cream cheese + avocado to make a delicious cream cheese and avocado bagel!

Sprinkle with salt and pepper, or the optional Everything Bagel seasoning for an extra burst of flavor. Then place the other half of the bagel on top, and you’re done!

Top Tips

  • Firstly, if you’re not using the Everything Bagel seasoning, do NOT skip the salt & pepper. It’s simple, but they are the flavor booster!
  • Secondly, give your avocado some zing by squeezing some lime juice over it.
  • Lastly, if you want avocado to be the star🌟 in this recipe, be careful to not add too many veggies! The vegetables (especially the tomatoes) could easily overpower the avocado flavor.

What Goes Well with Avocado Bagel?

To jazz this recipe up, add some Caramelized Mushrooms and Onions on top. You can also add some hummus (either homemade in 5 minutes, or store-bought) to make a variant of my Hummus Bagel recipe.

Adding pickles, herbs, or roasted bell peppers would also boost the flavor of this recipe.

For a spicy twist, add some Kimchi Aioli, Tandoori Mayo, or Gochujang Aioli. If you want to keep things plain, opt for this Oil-free Mayonnaise recipe (which uses tofu or cashews) instead!

Storage and Meal Prep Instructions

Storage: Note that this recipe is best served fresh. However, you can keep leftovers in an airtight container in the fridge for up to 24 hours.

Meal prep: Do you even need to meal prep if this recipe only takes 5 minutes? Hehe.

However, if you’d like to prep ahead (perhaps you’re making a big quantity, or for any other reasons), you can just cut and prepare the ingredients (except the avocados) and store them separately in the fridge.

Only cut the avocados before assembling to prevent them from browning and definitely only assemble the bagel before serving for maximum freshness.

FAQ

Load it up with (plant-based) cream cheese, creamy avocado, tomatoes, sprouts, or even hummus.

You can also go sweet with peanut butter and banana slices for a tasty twist, especially if you’re using some Cinnamon Bagels.

The answer depends on what you put on your avocado bagel.

If you’re using real whole foods and opt for whole grain versions instead of using regular white bagels, I would say that it passes as healthy. For maximum health benefits, skip the cream cheese in this recipe and opt for fresh veggies!

Yes for sure! As long as you’re using the Everything but the Bagel seasoning mix, this recipe will still remind you of that bagel flavor even if your toast won’t be as chewy when compared to using real bagels.

Don’t let that stop you though, you can still make a delicious avocado bagel toast just by combining avocado toast with Everything Bagel seasoning!

Ingredients

  • 2 whole wheat bagels toasted (or use regular whole wheat bread for bagel avocado toast)
  • 1 avocado
  • 1 Tablespoon Everything Bagel seasoning mix or sub with salt & pepper

Optional Vegetables

  • 3 Tbsp vegan cream cheese
  • 10 leaves spinach sub with arugula
  • 1 medium tomato sliced crosswise
  • 4 Tablespoons sprouts

Instructions

Preparation

  • Toast your bagel.
  • Now prepare your avocado.
    Slice your avocado thinly. You can already just use the avocado slices, or you can mash them to get a creamier texture.
  • To mash, use a spoon to scoop out the avocado slices into a bowl. Then use a fork to mash them.
    You can also use a combination of mashed and sliced avocado (see post above for how they will differ in texture)
  • (Optional) Add the remaining vegetables if using. As a rule of thumb, the order would be to add the cream cheese, spinach, avocado, tomato, then sprouts.
    Omit the vegetables that you're not using.
  • Sprinkle with your Everything Bagel seasoning, or some freshly ground salt and pepper.
  • Top with the other half of the bagel to make it a sandwich. Or just eat it open-faced. Enjoy!
