EASY blue matcha latte, made with butterfly pea flower powder. Also known as mermaid latte or blue moon latte, this beautiful drink is sure to impress!

Ingredients and Substitutions
- Butterfly pea powder: Sift before using to avoid clumps.
- You can also use dried butterfly pea flowers, similar to how I use them in my blue butterfly pea rice recipe. You will simply steep the flowers in hot water for about 5 minutes, so think of it as making a blue pea flower tea!
- Hot water: Helps dissolve the powder.
- Unlike when making your regular matcha latte, where you have to use warm water (instead of hot) to dissolve the matcha powder, it’s easier to use hot water here to help dissolve the blue pea powder better.
- Plant-based milk: Any kind works. Oat, soy, almond, rice, coconut, you name it!.
Optional Add-Ins: - Ice cubes: Use if making an iced version.
- Agave or maple syrup: Any liquid sweetener works. They also pair great with my lavender simple syrup!
- Vanilla extract: Optional flavor boost, similar to my vanilla matcha latte recipe.

Step-by-step Instructions
Sift and whisk the butterfly pea powder with hot water until smooth.
Prepare the milk or ice cubes: Warm the milk for a warm latte, or add ice cubes to your glass for a cold latte.




Combine: Pour the milk into your cup, then add the blue ‘tea’ mixture. Stir well.
Add optional sweetener and vanilla if using. Enjoy your blue butterfly pea flower latte!
Top Tips
- Sift the powder: Butterfly pea powder clumps easily, so try not to skip the sifting part so you can get a smooth mermaid latte!
- Use hot (boiling) water to dissolve: Unlike regular matcha, which burns in hot water, butterfly pea powder actually dissolves better with hot water. So no need to hold back the heat here!
