Why You Will Love This Honey Lavender Syrup

Ingredients
- Lavender: The star ingredient! Be sure to use culinary-grade or food-grade lavender.
- And if you’d like to learn more about other pretty vegetables, check out my list of 30 purple vegetables!
- Apple juice: Adds a subtle fruity tone. This is the secret to adding that additional aroma that honey has, without using real honey!
- Water: The base liquid that helps dissolve the other ingredients and gives the simple syrup the consistency perfect for drinks.
- Agave syrup: A vegan-friendly sweetener that blends smoothly.
- Note that you can also use real honey in this lavender honey syrup. In that case, replace the apple juice with water and you’re good to go.

Step-by-step Instructions
Boil water, apple juice, and the dried lavender buds in a small saucepan. Simmer for 30-60 seconds, then turn off the heat.
Only let it simmer for 30-60 seconds, but not longer! Overboiling the lavender flowers could make it bitter.
Add agave syrup and mix well. Let steep for 15 minutes.

Strain into a container using a fine mesh sieve, pressing down the lavender to extract extra flavor.

Enjoy your lavender-infused honey with your favorite drink, like this Lavender Matcha Latte!

Top Tips
- Adjust steeping time. Steeping time depends on the quality of your lavender and personal preference.
- Steep longer (up to 30 minutes) if your lavender has been opened for quite some time, or if you’d like a stronger lavender taste.
- Just be sure to taste test every 5-10 minutes so you don’t go overboard and get a ‘soapy’ or bitter honey lavender syrup instead!
- Remember that you can use regular honey instead of agave syrup. With honey, then you can omit the apple juice and just replace it with regular water.
- Although note that honey isn’t vegan since it’s the product of bees. I’m just offering this as an option since agave syrup could be harder to find and is usually more expensive.

Troubleshooting: Why is my lavender syrup bitter?
Lavender is NOT supposed to be bitter. So if yours tastes bitter, here are the three main reasons:
- The lavender is simmered for too long. This is why I recommend simmering the lavender for only 30-60 seconds, max!
- You steep the lavender for too long. A maximum of 30 minutes should be enough!
- You use too much lavender.

Honey Lavender Simple Syrup (Vegan, 2-Minute Prep)

Ingredients
- ¼ cup water
- ¼ cup apple juice or sub with water (see notes below)
- 2 Tablespoons lavender
- ½ cup agave syrup (see notes below if you'd like to sub with honey)
Instructions
- In a small saucepan, bring the water, apple juice, and lavender to a boil. Let it simmer for 30-60 seconds, then turn the heat off.
- Add your agave syrup, mix well, then let it steep for about 15 minutes.Depending on the quality of the lavender, you can let it steep longer for up to 30 minutes. But be sure to check every 5-10 minutes to make sure that the lavender taste won't be too strong (which will make the syrup taste a bit bitter adn soapy).
- Strain into your storage container, gently pressing down the lavender at the end to squeeze out a bit more lavender flavor. Enjoy with your favorite drink!
Notes
- I used the apple juice to infuse a little bit of honey-like aroma into the agave syrup. Subbing the apple juice with water would still work and be delicious, but it just lacks a bit of that extra floral aroma that honey has.
- If you don’t mind consuming honey, feel free to just use 1/2 cup water, 2 Tablespoons lavender, and 1/2 cup honey so you don’t need to buy apple juice just for this lavender-infused honey!
- Please read the post above for a more comprehensive explanation and tips!

Love the idea of adding apple juice! I made this and gifted some to friends. They all enjoyed the lavender matcha latte we made!
